I thought we could share our recipies and tricks for fake fatty food. For example...
fake mayonnaise
1 pot of fat free/greek yoghurt
1 tsp of wine vinegar
1 tsp of honey
1 tsp of mustard
All mixed up, it tastes just like mayo. Except it is a little runnier and doesn't have the same texture.. But it is great for salads, for example. Many people have told me they would never have been able to tell the difference
That actually sounds good! If it gets runny, I wonder if you could drain the yogurt a little before adding in the other ingredients. You can drain it over cheesecloth and make a mock-cheese from yogurt, though you probably wouldn't want to drain it that much for this recipe.
I always loved fried zucchini with creamy horseradish sauce for dipping. I make an oven baked version these days that I actually prefer over its fattier counterpart. I eat them as a snack and serve them as a side dish. Even my kids love them.
3 Tablespoons Italian bread crumbs
1 Tablespoon Parmesan
1/8 teaspoon garlic powder, paprika, and pepper
2 teaspoons olive oil
2 medium zucchini
Preheat oven to 475 degrees. Slice zucchini into rounds or sticks. Combine all other ingredients in a zip lock back. Add zucchini and toss to coat. Bake 12 minutes. Serve with 1-2 Tablespoons of light ranch dressing mixed with horseradish to taste. (cover the baking sheet with foil for easy clean up).
