Mozzarella part skim milk comes in bricks. Several of the name brand cheeses come in bricks also, it depends on your grocery store. Mine carries several. My mother lives in a small town in Kansas and they only carry 1 brand of 2% milk chedder cheese. Ask your store manager if they don't, many times they can get stuff if only they know that people are interested.
Trader Joes does have several brick low fat cheeses. I don't like the 50% less fat vermont cheddar. I don't know if it's because it's Vermont Cheddar or what, it has a strange after taste. I like the reduced fat Havarti. It is so good! I've seen lf Irish Cheddar one time, it was really good too.
And speaking of Trader Joes: They have a soy based shredded cheese that is surpising very good. It melts nicely, taste good and doesn't have that strange soybean after taste. I forget the name of it.
