Default Spinach stuffed pork chops

I just tried these out and they are so good.

Stuffing:
2 cups baby spinach
1 clove garlic
1/4 cup parmesan

Combine this mixture in a food processor until it forms a pasty consistancy.
I took boneless pork sirloin that was thin cut (pound it out enough to roll it)
and placed the stuffing at one end. Roll the pork chop.

Preheat oven to 500 F

I cooked the chops for 15 mins on 500 and turned the heat down to 300 for another 20 minutes. You could probably adjust the temp to your liking but I was cooking pork the way I usually cook steak. So I had to leave it on a bit longer to cook it thourghouly

Hope you enjoy, I loved them!!

I just picked up some pork chops yesterday and was trying to think of a recipe! Maybe cook at 500 just to sear them? You could probably cook them on all sides on the stove in a really hot pan then put in the oven at 300 for 20 minutes.
