Chicken & Artichokes (from rotobabe)
Chicken & Artichokes
1-2 boneless chicken breasts
1/4 cup of chopped prochutto or ham
Veggies (as much as you like of the following): asparagus, mushrooms, artichokes (canned - not marinated)
Chopped garlic
capers
olive oil
1/4 cup of white wine (you need this anyway for the shrimp salad)
fresh basil
salt and pepper to taste
Heat olive oil and garlic in frying pan. Slice chicken breasts on a diagonal so that they are thin pieces about 2"x2". Place chicken and ham in pan and cook for 2 minutes. Turn chicken and cook for 2 more minutes on medium heat. Place asparagus on top of chicken and cover. Cook on medium/low heat for about 5 minutes. Add mushrooms, artichokes, capers, white wine, basil and salt/pepper. Cover and cook another 3-4 minutes. Stir and cover. Cook for 2-3 more minutes.
Serve with steamed brocoli...(I used to eat this over pasta before I started on the SBD...so its a nice comfort food to have now)...
