Default Roasted Okra

My husband loves Okra. About the only way I'd ever been able to eat it was breaded in cornmeal and fried.

We discovered this method and it's a hit for both of us!

Okra - 10-15 pods/person (must be fresh and firm!) (it shrinks up a lot)
Olive Oil in a Misto Sprayer

Preheat oven to 400 degrees. Slice okra into coin shapes - approx 1/4 to 1/2 inch cuts. Place in a bowl and spritz lightly w/ olive oil just enough to lightly coat.

Line cookie sheet with foil and give foil a light spritz of oil. Spread okra into single layer and place in preheated 400 degree oven. Give the pan a shake after about 10 minutes to move the okra around. Roast for approx 20 minutes total or until crunchy but not burned.

It's crispy and tasty!
