Red face Yeah I have a Sweet Tooth, so what?

I'm still yet to research why is it that when one is stressed the only thing that just seems to make sense is to EAT something greasy or sweet... I personally run straight to the local bakery (which is unfortunately just a walking distance!). But today I decided to research some "healthy treats" for my sweet tooth and found great recipes of "HEALTHY RAW SNACK!!" ... And ohhhhh man I am glad.. they are just mouthwatering!!! Here is one for you fellow sweet toothies

Berry Maca Pie



Base: 2 cups macadamia nuts,

1 cup almonds,

1 cup dates, soaked at least 30 minutes then drained,

1/2 cup desiccated coconut.

Place nuts and dates in food processor and blend until a sticky crumb like consistency. Sprinkle dried coconut on bottom of 8-inch pie pan with a removable base. Press macadamia nut mixture onto coconut.

Filling: 2 cups cashews, 6 tablespoons coconut oil (gently warmed), ¼ cup lime juice, ½ cup agave nectar or honey, 1 tablespoon vanilla essence, 6 tablespoons water.

2-3 cups mixed berries, such as blueberries or raspberries.
Place all ingredients in food processor and blend until smooth and well combined.

Pour mixture onto base and freeze 1 to 2 hours, or until firm. Remove from freezer, slice while frozen, and transfer to serving platter. Defrost in fridge 1 hour or on countertop 30 minutes; top with berries; and serve.

I was about to pooh pooh this until I read the ingredients.

Awesome.

You should eat that every day.

My only suggestion (from someone that loves the stuff) would be to ditch the honey.

@IanG you will be glad to know that I didn't use honey at all, I usually use xylitol liquid when I bake... I have been meaning to ask someone here if they also uses xylitol liquid as a sweetener and if its bad in the long run!

This pie tastes like heaven and I love the healthy ingredients... We have different taste-buds so some might not like it. I loved the taste! There is no actual "baking" so I highly recommend yal to just try it.

Xylitol, even in tiny quantities, will kill a dog. So it's not allowed in my house for fear that my dogs would get ahold of it or something made with it.

Oh wow, the picture looks yummy! I hope to reach the point soon when just a photo won't get me so excited about food. Thanks for the recipe. I am going to save it.
