Its funny that despite this being a forum about food, eating better and less of it, there's not much talk about food. So i want to start breakfast lunch and dinner threads where we share what we eat and discuss our ideas about it if inclined. Im just having breakfast now. The others will come later but i don't mind if someone else wants to get the lunch and dinner ones going first if you are at that point already.
This is so delish I've had it two days in a row. Plus, it is simple to make and is an entire meal in just one dish - veggies, fruit, and protein. This recipe is a keeper.
For lunch today I had lettuce wraps with tuna salad. I like this recipe because it uses cottage cheese in place of some of the mayo, so it has extra protein but is still rich and creamy. Also, a bunch of raw veggies - baby carrots, bell pepper strips, and cherry tomatoes. And some blueberries and kiwi.
Such a light and lovely lunch to enjoy at the picnic table at work, outside in the sunshine.
1 2slice wholegrain sandwich with butter, about 35grams hot smoked salmon and 1 tomato
1 apple later on
Now i'm having 1 glass white wine before dinner.
Yesterday I had lettuce wraps with Hawaiian Chicken Salad (chicken, ham, pineapple, celery, onion, nuts, with a mayo-ish dressing). Love that stuff! And some kiwi and blueberries.
And right now for lunch I'm eating a Chicken Cordon Bleu Salad - artisan lettuce, veggies, chicken, ham, swiss, honey mustard dressing. Plus 1/2 apple with Peanut Butter Cookie Dough Hummus.
