Superbowl Sunday wknd is upon us! Woo hoo
Hubby & I will be hosting game day for 20 friends this year. Here are few of the healthier options I will be making. Of course I will be making plenty of NOT so figure friendly stuff too, for the less calorie conscience ones.

Mexican Shrimp cocktail-

No worries, I won't post any of the real caloric stuff I'll be making, as I do NOT want to tempt anybody with that food porn! I plan to indulge in all of the above and have a sampling of a few desserts & will wash it down with a lil homemade vino too! My 80/20 plan gives me the flexibility to do just that & suits me and my lifestyle. Have a great weekend all! Hope the team wins that you are rooting for, as for me and our group of friends, we prefer watching the commercials while getting our nosh on!

The chicken skewers sounds really good!!! I think I will be making that on Sunday. I am also drooling at the mexican shrimp cocktail. I may make that also, lol. Thanks so much for sharing!

Your welcome Amandie-
here's the recipe for the shrimp cocktail-

1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained
1 small avocado, cut into 1/2-inch cubes (1/2 cup)
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
Hot pepper sauce to taste

Directions

Place all the ingredients (except shrimp) in a medium-sized bowl and stir to combine. Cover the sauce with plastic wrap and refrigerate until ready to serve.

To serve, arrange the shrimp attractively on a platter. Spoon the sauce into a serving bowl and enjoy.

Nutritional Estimates Per Serving (1/4 cup): 60 calories, 4 g fat, 6 g carbs, 2 g fiber, 1 g protein and 2 Weight Watchers Points+

Thank you so much for sharing these recipes!

I just tried a great recipe for Guacamole with half the calories that makes a great dip. It is great with tortilla chips (in moderation) and/or veggies (I like cutting peppers into dip scoops).

You've been maintaining for almost six years. That is fabulous! Now I really want to raid your recipe box!

Sadly, I did not get to make the chicken skewers nor the mexican shrimp cocktail since the weather was too bad to drive to the grocery store, grr!! But it is definitely on the menu for later this week as soon as I get to the store.
