OMG!!! How did I never have this before!!!!

I was food shopping the other day, and my Wegmans has peeled, cleaned and cubed rutabaga.

i roasted it on 400 for 40 minutes with some EVOO and italian seasoning. Can i really have 2 cups? I feel like I am eating potatoes!!!!

Yes!!!! I had never had it before IP either - I'm finding that it's a decent substitute for sweet potato and butternut squash! Check out Rainbow's Mix'n in the Kitch'n thread - she posted a recipe for Rutabaga bisque that is a PERFECT alternative to butternut squash soup - one of my wintertime favorites!

Haven't tried this yet. Have to add to my list of things to try. Is rutabaga a root veg or does it just sound like it is? In my head I just excluded it because all root veg are off limits.

Rutabagas are permitted. At least they were when I did P1 (2011 - early 2012)...

Rutabaga is in the turnip family not the tuber family - it is one of the approved veggies - and thank goodness for that!

Hi scorbett,

I heard somewhere they are extremely hard to cut and peel. I keep picking them up at the store and then setting them back down. Give me some tips.

Hi

The skins are VERY hard, plus the veggies themselves are big so the knife can get stuck. I make sure it is at room temperature before I cut it, which seems to help. I use a REALLY sharp Katana knife - Cut the ends off to make a flat surface, then I just slice away the skin with the knife. it's almost like whittling wood
