Found this on here somewhere a while back, but just made it for the first time. As you can see, it was edited by the original writer (maybe Finn?). I didn't measure the water, just put a little in the Potato Puree until it mixed up similar to dumplings texture, rolled them into ~ 1/2" balls, and dropped them in my stew to cook (~10 mins). They were a little tough/chewy, but my VIP tried one and said it reminded him of a ball of mozza cheese. I will def make them again!
POTATO GNOCCHI

Use 1/4 teaspoon of tomato basil soup (or any seasoning you want, i just had this left over)
add garlic, rosemary, one egg, pinch of salt and pepper to potato puree, add 1.5 - 1.7 oz of water. Just so that you have a thick paste. Roll 1/4 in balls or links and boil for 2-3 minutes or until they float. You can then pan fry them with olive oil and garlic for sauce or use Walden Farms tomato sauce.
EDIT…
Ok, I've tweeked this a bit over the last few days. Instead of 1.5 - 1.7 oz of water, I used 1/8 teaspoon. It makes the potato mixture look and feel like dough. You don’t need to boil them, just pan fry in EVOO and garlic.

LOL - now that I'm reading the recipe again, I see I even left out the egg! Sheesh...
