Default Curried Lentils

This is one of my favorite side dishes!

1 can lentils, drained
About 1 litre of chicken broth
1 tsp turmeric

Mix the following ingredients together in a pot and let bubble until the lentils are absorbing the broth. For me it takes about 30 - 45 minutes depending how high I cook. You can boil if you want, just make sure not to let it burn in the pot. If you are running low on broth, just add some more, or add water.

In a small frying pan, heat 1 T oil and fry 2 tsp of cumin seeds unitl browned. Add 1 T fresh grated ginger and a pinch of cayenne. Stir for a minute or so, then add to the lentil mixture (still cooking). Stir in well and add 1 T of lemon juice and some parsley (optional). I like to leave mine cooking until it is really mushy, but you can take it off the heat when the lentils still have shape but the liquid if mostly gone. Enjoy!
