Amazing protein-packed, easy ~200 cal dinner!
Okay, so this may sound weird but I think it is delicious!
The idea for this came from my favorite omelet at a diner chain around here ... basically it is a Mexican-type egg white omelet with chicken and veggies and black beans and cheese.
One of my favorite "Smart Ones" meals is Chicken Santa Fe - 20g protein, 7 net carbs, 140 cals. I usually pair it with extra veggies. But last night I was feeling like more protein.
Soooo I cooked the Chicken Santa Fe in the microwave for 4 minutes, and while doing so made up four egg whites, then mixed in the meal in the pan. It was SO good. The eggs bulk up the meal a lot, and it comes too 34g protein, 7 net carbs and 208 calories! Next time I may add a little LF cheese.
I realize cooking whole foods is best, but for a night when I came home from work at 8:30 exhausted, this was perfect!
