Default Cauliflower

Last night while making cauliflower, I noticed that cauliflower has 3 net carbs a serving. Should I not be eating cauliflower?

Also, if I can eat it, what are some good ways to eat it (particularly creative ways like ricing it or making it into a faux potato?)

Cauliflower is on the approved list. I bake it at 425 degrees for about 35 minutes. I spray it with some olive oil and sprinkled salt. It carmelizes and has a great sweet taste to it. You can also add curry powder to it for something different. It's a family favorite.

I love it. When I have the chicken soup for lunch I put boiled cauliflower in food processor with salt, pepper, and other no salt seasonings, and add the chicken soup, it has a mash potato consistancy and it taste very very close. yum. some I can't believe it's not butter spray added is good too.

I eat it a lot too. I like to add onion, and mushrooms and roast it with garlic cloves, sea salt, and olive oil. I like to add broccoli and sometimes green peppers also but haven't been lately. I also have boiled it and mashed it just with my fork and added a little Mrs. Dash and ICBINB spray. I love it raw also though.

All vegetables have carbs in it. They're just very low. Cauliflower is low enough that it's not on the "occasional veggies" list, so enjoy.

Cauliflower is a magic vegetable for me, I LOVE it (I HATED it before IP ). I boil it, then blend it with a little water, garlic powder, minced onions, and oregano to make "mashed potatoes." I also shred it with a cheese grater and stir fry it with soy sauce to make "rice." I cut it up into small pieces, boil it, and use it as a filler instead of bread when I make meatloaf. Cauliflower is in my fridge at all times!!

It is one of the higher carb veg, but it is on the list of approved veg. I love all the ways Treena does it plus I also steam it and pour my broccoli chedder soup over it and it is like a cheese sauce for the cauliflower.

i used to make cauliflower tator tots, where you take mashed cauliflower, roll into balls, dip it in a seasoning mix including the powdered parmeson cheese (which is like 25 calories for a serving so not much) -- is there a way yall think i could do that without the cheese?

Yum, sounds good. I LOVE cauliflower too, also wasn't ceazy about it before IP. You could mush up the southwestern puffs and roll it in that. Yum, that sounds good too. Ok, I'm outta here, linch time.

I"ve taken the crepe mix, added some ground fresh rosemary, salt and pepper and put in a flat dish. Spray a cookie sheet with safflower oil (takes high heat) and pre-heat the sheet in the oven at 425.

Break the cauliflower up into popcorn-size pieces, wash and spin dry. Whip up some egg white and a little evoo together. stir the cauliflower into the liquid, let the extra drip off then "bread" in the crepe mix.

Once all breaded, pull out the hot cookie sheet, spread out the cauliflower, spray lightly with evoo and put back in the oven. Put back in the oven for about 5-7 minutes at 425, which should "harden" the crepe mix a bit. stir them around and put back in at 350 for another 10-15 minutes or so. Should be golden brown and crunchy! Makes a great lunch!

try using the broccoli cheese soup mix
