Question calories at family dinners??

So, when you all make dinners for your families, how do you could the calories? Especially when you make stuff in the croc pot? The recipies in the cook books state the calories but how accurate is that?? For stuff that's not made in the croc, do you weigh? What about the sauce or stuff it's cooked in? I just feel at a total loss. When I lost weight previously, I just ate frozen dinners but now that my daughter eats what we eat, I have to make a family dinner..... HELP PLEASE!!!!

Figure the total calories in the entire dish and divide by the number of servings, that will give you the calories per servings.
