Default Eggplant Recipe?

Hello...
So I know there is a thread of recipes but I couldn't fin any recipes for this, so I am asking if anyone could give me a good eggplant recipe? I know we can only have this twice a week, I am just trying to change up my veggies!

I roast a whole eggplant in the oven at 350-degrees, for 30 - 50 minutes, until it's nice and soft. Let it cool. Peel it (the skin comes right off after it's been roasted) and put it in a food processor with a clove of garlic, and handful of coarsly chopped parsley, a quarter red onion, juice of half a lemon and 2 Tbs. olive oil. Blend it until smooth. Salt and pepper to taste. Makes a lovely dip for celery or carrots, a great sauce for grilled fish or chicken.

I have no idea how long it keeps in the fridge...tastes to good to leave it alone!

Great idea. I'm feeling the need to mix up veggies. I will try this.

I slice the eggplant, dip it in egg whites coat it with seasoned bread crumbs and broil for 5-7 mins then turn them over and broil for 3-4 more, top with a low fat cheese and any veggies you may want and broil for a few minutes more.

Oops, sorry, I did not know this was the IP forum, this prob won't work for that plan but it is still yummy lol

Peel it and cube it up. Put it on a cookie sheet and drizzle with olive oil and salt and pepper...bake until tender. Yummy!

I smother my eggplant and put it with ground meant then make stuffed bell pepper...its yummy

you can make an IP safe version of the breaded eggplant.

take soy nuts and crush into breadcrumb size grains. Add the spices of your choice. then dip the eggplant slices in the egg and into the soy nuts. spray a baking sheet with olive oil and lay the slices on the sheet. add a light spray of evoo on the top and bake at 425.

note: if you have some prep time, slice the eggplant the night before. wrap in paper towels and then in a clean dish towel. lay on a plate and put another plate over them and apply a slight weight. leave over night.

this presses out some of the extra moisture so they get crisper. works with zuccini too. and I use this same "breading" for chicken and fish, even in phase 4. (with chicken add a little oregano or rosemary, with fish try a little paprika, etc.)

I like to slice it lengthwise - make a marinade of olive oil, vinegar and seasonings - salt, pepper, basil, dill, etc. put marinade in ziplock bag, add eggplant and marinate for about 30 minutes. Put on the grill for about 5-7 minutes each side.

That recipe looks great. How do you count the amount? 1 c is a cup of veges or less?

I just cube my eggplant, measure my 1 1/2 cups and pan fry it until its soft then add my 6ozs of hamburger meat. Mixing everything together and stuff it in the bellpepper and bake in the oven for about 30 minutes.

I think next time I will make some cauliflower rice with it so I will have to cut my eggplant to a cup and a cup of cauliflower rice.
