Just because the OP gained a lot of weight in a short time doesn't mean she ate 3500 cals for every lb- the weight gained is likely a combination of water retention/bloating, and the sheer weight of a large amount of food. This is different from 1 lb of pure fat that has been on the body for years and takes a 3500 deficit to remove. Think of the opposite- if you fast for 1 day you'll likely lose 1-2 lbs in just one day, but that doesn't mean you created a 3500-7000 deficit in one day by burning 1-2 lbs of fat (few of us have BMRs that high), it has to do with the weight of the food and other factors. Once you return to normal eating you'll pick up that weight very quickly and be back to normal. Similarly, if you weight yourself after a normal sized meal of 400-600 calories you'll be a few lbs heavier, but this doesn't mean you ate 3500-7000 calories.
OP, it does sound like your scale may be a bit wonky, but regardless, weight that comes on VERY quickly after a huge binge will likely come off quickly as your eating returns to normal and as the body processes the food/water associated with the binge. We've all been there, so don't be too hard on yourself... you should be back to normal very soon!
