I've heard different stories - some just get handed the maintenance menu and told "good luck." Some go through stabilization first. If they just give you the maintenance menu, you can find the stabilization one in this forum.
I think if you're in the healthy range for BMI and for body fat %, you will be fine. When I was at my goal weight (and knew I was way thin for my taste and would lose 5-6 more during stabilization), one of the counselors said that I still had 30% (still healthy range) body fat and that I needed to lose about 10 more pounds. We actually almost got into a fight about it. I was already feeling my tailbone while doing situps and was in a size 10 at 6'1". I said that I would absolutely not lose more weight - that I would stabilize and try to lose fat % without losing weight through exercise. She finally caved and gave me the stabilization menu. I ended up losing 7 more pounds through stabilization. My trainer laughed and said that in his opinion, I have no more than 20-25% body fat, but the only way to know for sure is to do the hydrostatic dunk tank.
I would just suggest that you find out what the healthy BMI and body fat % is for your height and find a weight somewhere in the middle of that range. I'm with you - I like to have curves - but not at the expense of my health. I'm probably a little thinner than I like aesthetically, but I'm in the perfect mid-range for health purposes.
All that to say - advocate for yourself, but also know that it's easier to stabilize and maintain if you're at a healthy weight.
