My favorite is to saute shredded zuccinni, summer squash, carrots, mushrooms, broccoli florets or cauliflower (in any combination). I also cook it in broth, or add a 1/2 tsp of low sodium Better Than Boullion. And I like to throw in some nuts at the end if I'm going meatless that day. Walnuts, almonds and pecans are my favorite.
