Default Cheesy Zucchini

So, we've had more zucchini than I care to eat lately, which lead to some experimentation and, voila! My new favorite way to eat zucc.

1 large zucchini sliced into 1/4" slices
2 tbsp lowfat mayo
1 egg
1-2tbsp balsamic vinegar
1 teaspoon garlic powder
1/2 c shredded parmesan or asiago cheese (I reccommend the shredded stuff, haven't tried it with the powdery kraft in a can parm cheese)
basil, oregano, and cayenne pepper to taste

Heat oven to 400 degrees.

beat egg, balsamic vinegar, and garlic together

dip each zucch slice all the way into the egg mixture, makign sure to coat evenly

mix remaining ingredients and season to taste (can also add a little more garlic here if you're a garlic fan)

top each zucch slice with a bit of cheese mixture and smooth out over the top.

Bake at 450 until bubbly and delicious looking, about 10 minutes. (you can also stick them under the broiler for a bit)

serves 2ish- depending on how many zucchini slices there are, the diameter of the zucchini, and how much mixture you put on each.
