Default Random Acts of Yummyness

Sausage Egg N Cheese McMuffinless
Preheat oven to 350
Spray Muffin tin with Butter flavor cooking spray

6 breakfast sausage patties of your choice Mine were turkey
6 eggs
3 slices cheese
salt/pepper to taste
Pop the sausages into the bottoms of the tins crack egg on top
sprinkle with spices of your choice
bake 15-20 min add 1/2 piece of cheese bake another 10-15 min

Might be yummy with a mini flax muffin

Tuna spinach pesto Loaf (made out of necessity b/c my turkey was bad!)
Preheat oven to 350 and spray Pie Plate
2 5 oz can tuna
1/2 bag frozen onions
1/3 !6 oz bag frozen spinach
2 eggs
McCormick Pesto Mix
Sautee Onions and Spinach till cooked through
Beat eggs and tuna together
Mix in cooled Veggies
Beat in Pesto Mix
* I didn't but added Italian cheese would make this a little yummier

Glop into pan and bake for 30 min

a variation to the Tuna loaf
use 1.25 pounds ground turkey
double the onions and spinach
pulse or beat in the mixer a drained can of White beans

Depending on the size of your pan ( I made mine deep dish in a pie plate)
30 min in a big pan or 1.25 hours in a pie plate



Almond applesauce muffins
Preheat oven to 350
1 cup Almond meal
1 tsp baking powder
1/2 tsp salt
1/4 cup splenda (tho you might want more)
Cinnamon, ginger, nutmeg to taste
1/2 cup NSA Apple sauce
1 egg
1/4 cup water

mix all dry ingredients
add in apple sauce egg and water
Line 6 cup muffin tin with foil liners
(you may want to spray them mine stuck a bit)

bake 25 min
This was soo yummy as moist!!! I might try them with Chocolate and coffee next

I've made something similar to you McMuffinless before, but I used ground sausage crumbled and mixed with the egg, and I piled shredded cheese on top. I've also made them before with some salsa mixed in for a little kick. Quite yummy, and popular even with the boys at work!

that sounds good Jill I do mini quiches too
Been pondering Mixing some Flax/Almond meal in with the egg to Make My own bun (not a MIAM but just a little good carb action!)

Ange, where in the heck have you been?! You get a man and leave us in the dust!!! LOL!!! Have you heard anymore about your plastics? KO: Your stuff sounds good and is on my list of things to try. I made homemade sausages patties and froze them yesterday. Pork loins were only $1.39 a pound this weekend and I really have to watch too much fat. I actually think I can take sugar better than fat, but that pattern was set years before I had WLS. Wonder if Nessa is in surgery yet?
