The menu that you received is for days 1-4, you will then get another menu for days 5-10. As for the days where you cut everything out, that is preconditioning. During preconditioning the encourage you to begin eating 3 meals a day, cutting out caffeine, sugar, snacking and begin getting in 64 oz of water. Generally with a center they will have you do preconditioning until your food class and then have you start program on a Monday. The preconditioning thing seems to vary widely from center to center in terms of lengths and instructions during that period. My suggestion would be to pick a date that you would like to start on program and precondition until that point.
