I was going to have a chicken cesar salad (low fat cesar dressing) with home made whole wheat croutons but it's such a lovely day outside today so I have decided to have bbq Salmon with brown rice and a salad instead. Yummo!
I made chicken parmesan last night (healthy version), so we're having leftovers tonight. I'm going to have mine over spaghetti squash, with some low fat marinara, a sprinkle of parmesan cheese and a side of roasted asparagus (boyfriend hates spaghetti squash, so I'll boil up some pasta for him).
A small jar of roasted red peppers in water chopped up and mixed with white meat chicken strips, sauteed in a little olive oil and lots of Italian seasoning. My 5-minute meal when I'm in a hurry!
I'm having a nice lonely friday night....1/2 a can of tuna with lemon juice and spices on salad, I've been left alone at home so I feel like lying down in front of the tv and not moving all evening, so a nice easy dinner for me tonight
