Not sure on an answer to your question though. I guess it would depend on the GI for those things. I suspect it all digests differently than whole corn but whether or not it's better or allowed, I don't know.
So, yes, there was no point in my responding to your post.
Because of the high glycemic, corn is not allowed on Phase I & II which I think is too bad. I think it's pretty nutritious. I'd stay away from the Sunchips altogether. Even if it's whole grain, it's got corn and rice flour in it, and I'd be tempted to eat more than 1 serving. That kind of food gets me into big trouble.
ETA: Cornmeal has a high GI(68-98), probably because it's ground up, but when I looked up the GI on hominy(40) and sweet corn(56) (depending on the website) it looked pretty good.
I tried to post a recipe for Delicious Low Carb Cornbread from recipezaar but I don't have enough posts yet to post links :/ I guess you could search for it there ... it has NO corn in it and could even be used in Phase 1. I used a combination of about 1 TBS ground almonds & the rest almond flour to give it a little "grit" in the texture and I used Smart Balance instead of butter.
There are a lot of other cornbread recipes using almond flour but they have more butter and other things like cream cheese and/or cream in them. The recipe above is not the same as the cornbread we know and love but it's not a bad substitute.

Stacy, I hope you are not serious about honey. Grits and hominy are corn by the way and are not allowed on SBD Phases I and II. Please refer to the Food Lists.
My MIL is diabetic. Even before SBD, I put splenda in real cornbread and it's fine. I hope he finds almond flour. I'm going to have to go to Birmingham to find it.
Ruth -- that was my initial question. Is there a difference in the corn? We can have popcorn, but not corn on the cob. What kind of corn is hominy and grits? What makes some allowable and some not?
