The numbers in parentheses are Set Points. You can use those numbers to eat as much of that food (within reason) at that meal. (If you decided to eat as much of that food item at two separate meals, you would need to count the set points twice - once for each meal) The Set Points are designed to be a tool for situations where it's harder to measure points, or a situation where you just don't want to call attention to yourself.
For example, at a barbecue:
Grilled chicken (a reasonable portion) - 5 points
1 c green salad - 0 point
roll - 3 points
