Green Beans Sauteed with Olive Oil and Garlic
Fresh thin green beans*
2-3 T. olive oil
2 fat cloves of garlic
Coarse salt / freshly ground pepper to taste
* I used approximately 1/2 pound to serve a hungry me with a little to use as left-overs.
Wash green beans and trim ends - I pick them up in a bunch and snip the ends off with scissors. Blanche beans in a pot of boiling water approximately 2 minutes. Drain beans or remove with slotted spoon. Heat olive oil over medium heat and add peeled sliced garlic. Reduce heat immediately; stir garlic just til it begins to color slightly. Add green beans, sautee quickly. You want them still crisp, but hot through.
Left overs? Place green beans in a shallow baking dish sprayed with Pam. Sprinkle with coarse salt, freshly ground pepper and top with grated cheddar or parmesan cheese. Bake at 350 til the cheese melts and begins to get a bit bubbly.
