Default summer veggie meals

I had alot of fresh veggies the last few days and my calories have been really low. Is it safe to cut them low when eating tons of fresh veggies in the summer. I dont want to stall my weight loss. I am even adding in snacks at night to try and bump up my calories.
yesterday I had a yogurt smoothie for breakfast with fresh fruit..about 200 calories
lunch; grilled chicken tenders 90 calories
steamed squash and zuc 100 calories
sliced tomatoe 25 calories
snack; prunes 100 calories
snack string cheese 50 calories
dinner: 1/2 cup mashed potatoes 200 calories
baked green tomatoes 30 calories
baked squash and zuc
green beans 1 cup
snack; serving of nuts 170
total 1065
I usually stay around 1500 per day.
I know i wont eat as many veggies as the summer goes on but right now i just cant get enough.

Add some hummus, a glass or two of milk, maybe a bit of butter - or pesto!

cant stomach milk....I do fine with yogurt and cheese but truly my stomach cant do milk. I do use EVOO for cooking some.

Just make sure your getting enough protein.....I didnt see a lot of that in you day....even if you have to cut up a chicken breast and cook it in strips to munch on. Just season it cook it and then store it in the fridge...you can take out an ounce or so at a time.
