Default HG butternut squash

I just tried the Hungry Girl recipe for butternut squash hashbrowns. YUM! The squash has a good consistency, I used lots of onions, I didn't feel bad as my son had regular hash brown.

PER SERVING (about 1 cup, entire recipe): 85 calories, 1g fat, 162mg sodium, 20g carbs, 3g fiber, 5g sugars, 2g protein -- POINTSŪ value 1

Awesome! I just made the HG butternut squash fries for the first time today! I only cooked half the squash for my husband and me to split because he was sure he wouldn't like them, but we both loved them!

I've been wanting to try the butternut squash recipes in HG. Will get around to it soon, I hope. Sounds like a great way to get in veggies.

I tried the squash fries today--I didn't realize squash was so sweet and tasty! Though I probably wouldn't go through all of the hassle of cutting it up into fries again (not to mention they shrunk to 1/3 the size) but I can definitely see myself making squash again in the future.
