Talking Any good Low Carb Recipe's for the summer

I have decided to come back to the low carb way. It's one diet that works well for me.

Anyway, does anyone have good summertime recipes?

I am looking for some fresh ideas for the summer.

Check out Phase I Entrees over in South Beach. Most of them are pretty low carby!

I love making potato salad with out potato's, instead use cauliflower.

Cauliflower
Salt
Pepper
a splash of pickle juice (instead of vinegar... it has vinegar plus spices that make the salad yummy)
Mayo
bacon - optional
egg - optional

Basically your fav potato recipe modified with cauliflower!! enjoy.

I like to make my "potato" salad with turnips.

I peel and cube the turnips (about 1/2 inch) and boil in water that has a couple splashes of pickle juice in it. Boil until very tender.

Then mix with lots of chopped boiled eggs, pickles, mayo, mustard and yep - pickle juice. I'm going thru Miracle Whip withdrawals so I like to add a pack of Splenda or two depending on how much I'm making.

Thumbs up California Chicken Salad

I just ate this - tonight - so it's not just for summer. It is a great use of avocados. I can't recall where I got the recipe - but I'll tell you I'm not the originator. It is a favorite at our house.

I won't give carbs or measurements as it's all to tast pretty much.

In a bowl tear up some romaine lettuce into bites. Add diced avocado and diced chicken (or other leftover meat - I like grilled chicken best - but it's also great with shrimp (who has leftover shrimp?), fish filet, can of tuna etc.

Sprinkle with salt (should be a little heavy on the salt) - I used a sea salt grinder. Sprinkle with black pepper.

Drizzle with lemon juice - I used juice of 1/2 lemon - makes it quite tart.

Drizzle with olive oil - I like to be heavy a little on the oil - makes a nice mouth feel element.

Toss and devour. I'm best at the devour part.
