I love the Zatarain's beans and rice mixes! One of my very favorite meals is bean and rice tacos. I take one serving of the beans and rice, and put it in two or three small soft taco shells (the ones I use are 1 pt each). I also use 1 serving of light sour cream. Then I just steam a cup or two of 0-pt veggies on the side, and yum, a filling and very tasty meal!
I use bean and rice tacos as a meal to "treat" myself without going off my points plan. It feels like a splurge without really being one! :-)
