Exclamation Apples, apples, apples.

I have half a dozen apples here I have to bake with soon. I've eaten a lot of apple sauce lately, but I don't want to make a pie and, although I love apple crisp, I don't have the oats, etc... Does anyone have another use for them? (Keeping in mind that I'm a student with limited kitchen gadets) I'm thinking of doing baked apples in the oven, like a crustless apple pie, but I'm not sure how that would work. Any suggestions?

Turnip pie, FYI, tastes remarkably like pumpkin. Long live the turnips!

I really enjoy an apple cut up on a salad, or I like to make a side dish of poached apples by peelong them and slicing them into a saucepan and adding 1\2 tsp of sugar and a dash of cinimon. simmer until tender and serve with dinner or as a snack.

I would sugget getting some oats. Mmm nothing better than apples and oatmeal.

I'll see if I can find some non-oat, simple recipes as well.

Apple Oatmeal


1/2 cup (about 1/2 medium) diced apples
Dash each ground cinnamon and nutmeg
1/3 cup each apple juice and water
1/3 cup quick cooking rolled oats, uncooked
1/8 tsp. salt (optional)

Combine apples, juice, water and seasonings; bring to boil. Stir in rolled oats; cook 1 minute. Cover and let stand several minutes before serving. Makes a 1 cup serving.

Nutritional Analysis Per Serving: Calories, 180; Fiber, 4 g.; Cholesterol, 0; Sodium, 25 mg. Percent calories from: Protein, 10%; Carbohydrate, 80%; Fat, 10%.

Apple Pasta Salad


1 container (8 ounce) plain nonfat yogurt
2 cups uncooked rotini pasta
1 can (8 ounce) unsweetened crushed pineapple, undrained
1/2 cup shredded carrot
1 cup sliced celery
1/2 tsp. salt, optional
1/4 cup sliced green onions
1/4 tsp. garlic powder
1/4 cup raisins
1/4 tsp. dry mustard
3 cups diced, unpeeled apples
1 Tbsp. honey

Thoroughly combine yogurt, pineapple, salt, spices, ginger and honey; refrigerate. Cook pasta according to package directions, omitting salt. Rinse with cold water and drain thoroughly. Cool completely. In large bowl, combine all ingredients including yogurt dressing. Chill thoroughly before serving. Makes 8 (1 cup) servings.

Nutritional Analysis Per Serving: Calories, 215; Fat, 1 g; Cholesterol, 1 mg; Fiber, 3 g; Sodium, 175 mg; percent calories from fat, 4%.

Apple Compote


2 apples
2 cups watermelon cubes
1 cup seedless grapes
1 orange, peeled and sliced
1 banana, peeled and sliced
2 cups chilled ginger ale
2 Tbsp. lime juice

Core apples and cut into bite-size pieces. Toss with watermelon, grapes, orange and banana. Combine ginger ale and lime juice. Pour over fruits. Serve immediately. Makes 6 servings.

Nutritional Analysis Per Serving: Calories, 110; Fat, 1 g; Cholesterol, 0 mg; Fiber, 2 g; Sodium, 12 mg; percent calories from fat, 5%.

APPLE COLESLAW

1 cup FF Miracle Whip Dressing
1 tbl. Honey
3 cups shredded green cabbage
2 cups shredded red cabbage
1 1/2 cups chopped apples

Mix dressing and honey in large bowl. Add remaining ingredients and refrigerate till chilled. Makes 6 servings.

Apple Sauce

Simply peel, core and cut apples into chunks. Put into a covered microwave dish and cook for about 10 minutes on HIGH. Check to see if it is mushy enough. Cook a couple of extra minutes if needed. (You will need to cook longer if you are using super crisp fresh apples.) Just add a little cinnamon and nutmeg and voila, you have fresh, hot and totally wonderful applesauce. If using tart apples and you want the sauce to be sweeter, add a little brown sugar at the end. A little goes a long way.

I peel and chunk apples, place in saucepan with small amount of water, bring to boil & simmer. Drain, spray with either ICBINB or the Parkay spray. Add splenda, cinnamon and small amount of vanilla extract. Thicken with corn starch and small amt. of water. Can be served either warm or cold. Very good, but I don't know the points! Sorry.
