For dinner last night I made this:

It's a Bulgur Salad with Chicken and Corn and it was delicious, incredibly filling and very low cal!
I'm worried about starving my boyfriend to death, so I used the 2/3 of bulgur the recipe calls for, cut kernels off two ears of corn and divided into 3 portions; one for me, two for bf. I added some chopped, lightly sauteed red pepper and zucchini and of course cut down on the oil. Not including the grilled chicken, which I marinated in yogurt and calculated separately, my 1/3 serving was 217 calories (10g fiber, 8g protein) and it was HUGE. I actually didn't even finish it. Bfs portion was 434 and it was an obscene pile of salad. And it was very, very tasty and very, very filling.
Anyway, I highly recommend making it while there's fresh corn, tomatoes and zucchini to be had. Yum!!!
