Good Morning! I've been cruising this forum for about a month since joining LAWL. This is a tremendous resource.
I have a recipe of a cake that I had on a Royal Caribbean cruise. I was assuming that since it said sugar free, that is was fine for me to make for myself. Does anyone think there are adjustments to be made? I've never heard of this spa layer cake and muffin mix, can I just use a regular box mix?
SUGARFREE COCONUT LAYER CAKE.
Recipe for 1 Cake
FOR THE SPONGE:
INGREDIENTS QUANITITY
Spa layer cake and muffin mix (vanilla) 1lb. 14oz
Whole eggs 9oz
Oil 9oz
Water 9oz
METHOD:
1. Mix Spa layer cake and Muffin mix, Oil, whole eggs and Water for 2 minutes on medium speed.
2. Add water and mix for 1 minute. Scrape bowl and paddle. Mix for 2 minutes on medium speed.
3. Put in cake moulds and bake at 375degrees F for 25-30 minutes.
FOR THE CREAM:
Whipping cream 1 quart
Equal sugar 2 to 3 oz (to taste)
Malibu coconut rum 1 floz
Slightly roasted desicated coconut 1 lb
1. Whip cream, sugar, Malibu in a mixing bowl until firm
2. Cut the sponge into 3 equal layers.
3. Apply cream between each layer of sponge and also on the top and the sides of the cake.
4. Garnish with roasted coconut.
LoriMichelle - I have NO IDEA what spa layer cake mix is, unless it's something that the cruise line keeps in their kitchen. If you can get a few more details, I can submit it to the LA chef, or maybe your COD can. But I'm kinda confused on what to even submit to the chef for the ingredients.
Cassi.......you totally cracked me up on the losers thread about your non-fix-it DH. Anyway, did you see my post a while back that my COD says they do NOT have access to the LA chef? I go to a corporate center. Have you heard of such a thing?

LoriMichelle and anyone else - Give me an idea of a recipe to submit for this cake and I'll send it. I just don't know if I should put "bisquick" or something else maybe? Pearl???
I don't think so, but knowing that, the LA Chef should know what it is. I will submit it for you, but it will take a week to get back a re-made recipe.
Nicole- The LA website is only accessible in certain parts of the county, mostly on the east coast. I can't get it either here. When I asked about it at my COD a while back, they had never even heard of it and they are a corporate center too. I saw on their revamped website that current LAWL members can log in with their client number, so if I remember at WI tomorrow, I am going to ask for it and see what happens.
Cassi - If I'm not mistaken, (and that sure is a possibility!) that mix probably has dehyd. egg whites and possibly is made with splenda or aspartame to make it "sugar free". Some of them also ask for applesauce instead of oil to be called "fat free" or "low fat". I know that didn't help much, but that's all I've got for now... (when I cater, I cook from scratch)
