  • And I want to collect car parts that are lying around on the freeways and make sculptures from those!!! (I have a tailpipe in the garage right now waiting to be turned into a snake. DH had a fit when I asked him to help me bring it home. Of course it WAS muddy at the time!!! It is taller than I am!!!)
  • Good news, I am ok. Bad news, my car has seen better days. I got into a small accident this morning. Everyone is ok. The other car doesn't have a scratch. My car is driveable, but the front is dented. Mentally, I am getting better, but I completely lost it earlier. For about an hour after the accident I cried off and on. Then when I called the insurance company. I ended up with a very nice woman on the phone, who calmed me down. At least I had stopped crying prior to calling mom. Now I am eating comfort food.
  • Oh, crap, Squeak! I'm so sorry, sweetie! Thank God you're alright! You must have been so shaken up.
I'm glad you got a nice insurance person (how unusual).
You enjoy some comfort food... you deserve it, hon. Take care... xoxo
  • Thank you Ellis!

I am feeling much better today. I made some homemade hash browns & relaxed. Mom, sis#2 & munchkin came over for a bit. Not much to do today either.
  • Hi Squeak! I'm glad you are OK. Hey, homemade hash browns can fix anything, IMHO!
  • Thanks Ruthxxx! The warm potato & onion mixture does do a world of good sometimes.
  • Ummm... Squeak? I don't suppose you could share the recipe some time, could you?
  • Sorry about the accident Squeak. I'm VERY glad to hear that you are okay. They are just awful to deal with; the emotions, the insurance company (at least you got someone nice!), losing your car while it is repaired.....YUCK!!

At least you are okay though!!
  • Thanks Den! It is a mess, but I can deal. The funny thing is I probably have to answer a jury summons tomorrow. The car needs to go in Wed. assuming I don't have to go back to the jury thing Wed. Then depending on how long the collision shop has my car, if I need to go through the hassle of a rental car.

I don't exactly have a recipe Ellis. And it definitely is NOT good for you. I just use my food processor to shred 10 -15 potatoes, depending on how much I want to make and the size of the potatoes. Then add 2 onions using the same processor blade. Since I am lazy, I then throw it all in a glass cake pan (easier to clean later). Add some oil (probably about 1/4 - 1/3 of a cup). Mix it together to coat everything (and to mix in the onions better). Put it in the oven at 350, for anywhere between 1/2 hour - hour, depending on how much is in the pan. Just make sure you stir the potatoes every 10 -15 minutes so they don't dry out.

Told you - not exactly a set recipe.
  • Thank goodness you weren't hurt Squeak!

Hope you are doing better today and that you don't end up on jury duty
  • Why do jury summons always arrive at the WORST time?!?

The potato recipe sounds GREAT!! And pretty easy too...UH OH!!!
  • Oh, yum, Squeak! Thanks! That serves one, right?

How are you feeling... are you okay?
  • Mmmmmm...hashbrowns...
  • Thanks Mauvais!

The hashbrowns are dangerous. And easy. I normally divide it into 2 servings.

I am doing ok today. Airheaded, but mostly due to a cold/sinus issues.
