Thanks Den! It is a mess, but I can deal. The funny thing is I probably have to answer a jury summons tomorrow. The car needs to go in Wed. assuming I don't have to go back to the jury thing Wed. Then depending on how long the collision shop has my car, if I need to go through the hassle of a rental car.
I don't exactly have a recipe Ellis. And it definitely is NOT good for you.

I just use my food processor to shred 10 -15 potatoes, depending on how much I want to make and the size of the potatoes. Then add 2 onions using the same processor blade. Since I am lazy, I then throw it all in a glass cake pan (easier to clean later). Add some oil (probably about 1/4 - 1/3 of a cup). Mix it together to coat everything (and to mix in the onions better). Put it in the oven at 350, for anywhere between 1/2 hour - hour, depending on how much is in the pan. Just make sure you stir the potatoes every 10 -15 minutes so they don't dry out.
Told you - not exactly a set recipe.
