I couldn't find that recipe from Susan? It's not on page 4, I looked through all the recipes and no muffins and no Susan. what happened to her anyway?

Hi Bobbi, I had actually posted it in the recipe thread. See below -
Susann's Zucchini Muffins (DELICIOUS!) In a separate medium bowl, mix together the zucchini, egg substitute, applesauce, butter, and vanilla extract. Slowly add this mixture to the first bowl, and stir until thoroughly blended. Mix half the crushed walnuts (1 1/2 tbsp.) into the batter. Line 9 cups of a 12-cup muffin pan with baking liners and/or spray with nonstick spray. Evenly distribute batter among the 9 cups. Top each cup with a sprinkling of the remaining 1 1/2 tbsp. crushed walnuts. Bake in the oven for 20 - 25 minutes, until a toothpick poked into the center of a muffin comes out clean. Hi girls!
I just got back from the dentist and did the unthinkable, had a tooth pulled. That sucker had given me problems for years, didn't eat on one side of my mouth for 4-5 years. Dentist could never find the problem with the xrays so he did a root canal on it two years ago. He only found two root canals, never the third? This past week it started aching again and this time he (another dentist)said I'd have to go to a root canal specialist out of town $$$$$$$$$$$$big bucks or have it pulled. It's the last tooth on top and I decided I had enough teeth left that I didn't need it. Turns out it had 4 root canals on it, not the usual 3. Still cost me $108.00 but it certainly won't bother me again. I'm going down to sew some more on hubbys seats for the old car. Later Gator.......... |
Hi Gals,
We celebrated our 31st wedding anniversary yesterday but it was an unusual one to say the least. We attended a funeral for a dear friend of mine (the longest and hottest funeral I've ever been to, btw) and then went to the hospital to visit my mom. Mom is with my sister while we have a few weeks visiting our son and while she was with my sister she became jaundiced. She was admitted and was found to have a blocked bile duct. Yesterday she was supposed to have a procedure to open the duct but her neck muscles were too constricted with the Parkinson's disease and they could not pass the stint down her throat. I'm not sure what's going to happen now as we couldn't speak to the doctor as she was in surgery most of yesterday and couldn't contact my sister today. We'll be going to the hospital to visit again tomorrow so we'll find out more then, I hope. My eating has been way out of control but I don't care right now. Once I'm back home I'll concentrate on the diet part of my life. Right now I'm enjoying our little grandson and eating too much...I'll eat very spartan when I get home. DH is very easy to please with food so it won't be hard to eat a plainer and healthier diet come August and September. Bobbi, I hear you on the tooth stuff. Glad the tooth was in the back of your mouth. :) I was very sorry to hear of Linda's health problems. I hope everything works out well for her and that treatments will be successful. Meowee, was one of the first persons to welcome me to 3FC when I joined last year. Hope everyone is hanging in and doing as best they can. |

Sorry about the loss of your friend & your family's health problems. Hope you get to enjoy that grandson as much as possible. Enjoy - the diet will be waiting for you when you get home. Lynn |
I am SO HAPPY!
My DD's cancer was all caught with the treatment AND I found a new scrapbook store! I just know that August is going to be a GREAT month. Beginning the month at 153. I have until Labor/Labour Day to get to 149 or I have promised myself I will go back to Jenny Craig. I would REALLY prefer to do this on my own, but I am determined to get through this 150's barrier. Good Sunday Morning, just a few notes and I'm off to church.
Isabella...Our thoughts and prayers are with you, hopefully all will be well with your mom. Congrats on your anniversary! Lynn...I have no doubt that you'll drop those 4 pounds, did you do a jump start yet? Quote:

I'm doing it now. Trying to stay around 1,000/day for August. Also trying to alternate between 60 and 90 min of exercise/day for August. Lynn |
Hello Everyone,
The weekend off ~ yippee. Didn't sleep very well. Supposedly if you have dreams you are in that good deep sleep. But, my dreams are weird and unsettling. I'd rather not have any dreams than have upsetting ones. Hopefully tonight I will rest better. Woke up this morning to happy voices ~ Sara, Jason and Maddie were here. Maddie was playing with the water in the sink ~ more photo ops :D Been enjoying that movie Mama Mia! Like the music. Hope you all are having a good weekend. Take care |

Hi Gayle, I LOVED Mama Mia - saw it onstage in NYC and again in the movies. Was a LOT of fun. Lynn |
Bobbi,
You inspired me. I made the zucchini muffins today - they are REALLY good. Are you watching Big Brother this summer? Lynn |
Bruce loves the zucchini muffins, so do I. Yummo as Rachael Ray would say. I sent the recipe to another friend I have in Missouri and she's going to make them too. (Not our Karen31 from Missouri)
No Lynn, we do watch some reality shows but big brother isn't one of them. I have a big day ahead of me again tomorrow working on those car seats so I'm hitting the hay, good night. |
Hi everyone! I thought I would pop in real quick here. Things are starting to hit "normal" again. It will be a month since Dad passed away on the 4th. My son and his family are still here and busy re-roofing my brothers house. They will be leaving to go to Florida as soon as they get finished with it. Probably the end of this week or the beginning of next. It is going to seem really quiet after having them around for the last 2 months.
My neighbor brought over 2 HUGE zuchinnis and I have never fixed them before so I plan to try the recipe for the zuchinni muffins. Hopefully tomorrow if things go well. They sound good. We had another and my son sliced it up and grilled it. It was very good. Sure hope everyone is doing good. I hope to get back on a regular routine and back here more often soon. |
