Dijon Minute Steak

Serves 4

4 minute (cube) steaks
2 tbsp butter

1/3 cup finely chopped green onions (I used just one onion)
1 tsp dried rubbed sage
1/3 cup chicken broth
1/2 cup sour cream
2 tbsp dijon mustard (whole grain)

Sprinkle steaks with salt and pepper. Melt 1 tbs butter in heavy skillet over med-high heat. Add steaks in single layer and cook until browned, turning once...about 2-3 min per side. Set aside when done.

Melt 1 tbsp butter in same skillet over med high heat. Add onion and sage and saute until soft (30sec) Add broth, and simmer another 30seconds. On low heat, add sour cream and mustard...wisk it all together, and warm until steaming. Careful not to boil it. Season with salt and pepper if needed. Spoon sauce over steaks and serve.

The dijon sauce is approx 5.75 carbs per serving...this is a bit higher than it should because I used fat free sour cream.

that looks quite tasty. we don't have the minute steaks here, but should work with hamburger steaks. can't wait to try it.

We will try this one..it looks yummy. I'm a sucker for fried cube steak..but can't have that much anymore..because I would have to have my pepper gravy..lol

pepper gravy? this sounds really good....how do you make it? Im sure I could lowcarb it, if it isnt. share pls

I just buy the mix and add water..lol. I'm lazy like that. It's a wheat flour based mix. The mix is 6 carbs...and there is supposed to be 8 servings...well, I like my gravy..so, I probably use about a third of this pkg. So, I'm probably better off without.
