Default Amazing Vegetable Soup

2 qts. low/no sodium stock (your choice chicken or beef)
1 small head savoy cabbage, washed, sliced
1 head celery hearts, washed, sliced
1 leek, trimmed, washed, white and pale green part only
5 cloves of garlic, peeled and sliced thin
1 cup green beans, washed, trimmed, chopped into 2" pieces
2 tomatoes (no bigger than a tennis ball) peeled, seeded and chopped
1 medium zucchini, washed, cut into 1/4" thick rounds
1 medium yellow squash, washed, cut into 1/4" thick rounds

Combine first 7 ingredients in large soup pot, bring to a boil, then turn heat down and simmer until green beans are tender. Add tomatoes, zucchini and squash and cook an additional 45 minutes.

Enjoy!

** You can add cooked chicken breast or cooked ground beef to this soup to make it heartier. Or even add navy beans.

Made this last night only without the zuke and squash (thought I had some but didn't), and with the addition of some freshly ground white pepper. I had to use 3 quarts of broth, too - I must have had more veggies than I thought! 2 quarts didn't even come close to covering them. That's okay, though - it just made that much more! It was really really yummy - the garlic gets all mild and adds a rich, buttery flavor to the soup. We ate some before dinner last night, and then today we reheated leftovers for lunch, and we stirred in a spoon of pesto before eating it - that was soooo good! The pesto really went well with it!

We used LS NF Chicken stock..
Used all of Mamacitas Except went with regular cabbage….
Threw in Kidney beansand Mushrooms in lieu of EEK leeks..
added some spices like flaked Onion, salt , peppah, a tich of chili ....Served with a hunk of Soudough (phase 2) with Smart Balance..

Filled me up Buttercup Baybee! and it was YUM..O..LAH..
will have fer lunch tomorrow

Oh, yeah - I used regular cabbage, too. The store usually wants at least twice as much for savoy, when they have it! Not very popular here, I guess. I used ff organic chicken broth for mine, and I also substituted a can of diced tomatoes (drained) for the fresh tomato.

Schatzi, you don't like leeks? But they like you! I love leeks, but I'm part Welsh - it's in the blood! Like Italians and garlic!
