Default help me eat my smoked salmon...

I have some smoked salmon, and no idea how to eat it... it is frozen right now. I'm looking for quick and easy ideas for breakfast and lunch, but not with cream cheese.

Well I love it on a bagel with cream cheese and tomatoes, but you said no cream cheese. What about on crackers? It's good on club crackers also.

Try flaking some into scrambled eggs. Or putting some on crackers, drizzling on a little lemon juice and maybe some chopped onion.

Rachael Ray has a smoke salmon pizza I've been dying to try. You could use low fat or non fat sour cream to make it healthier. http://www.foodnetwork.com/food/reci..._23508,00.html She also has a recipe for salmon in scrambled eggs. Hers uses heavy cream, but you could easily use evaporated skim milk instead. http://www.foodnetwork.com/food/reci..._22135,00.html

Also, if you go to foodtv.com or allrecipes.com and type in smoked salmon, you'll get a ton of recipes.

LindaT--that first recipe sounds wonderful! thanks for posting that link!

mmm...smoked salmon! my hubby and i like smoked salmon on whole grain triscuits with a little low fat or fat free sour cream and thin slivers of a sweet onion, like vidalia. not so great for the breath , but we were only breathing on each other!
