Things have been insane the last few days. I can't remember enough of what I was eating to log, but I remember having to eat out a lot (not by choice. Options are limited when you're waiting for your car in the shop...)
This morning I did start out pretty good with a bowl of oatmeal and fat free cottage cheese w/ blueberries.
Lunch is a bowl of Optimum Power Cereal w/ skim milk, a quarter of cantalope, and a small dish of fat free sugar free chocolate pudding.
I'm aiming for whole wheat spaghetti for dinner, but the stupid car is going to have the final say on dinner plans.

Okay this is what I ate today: I can probably do better I'm sure.
Breakfast: lean cuisine - I know it's weird but they are small and I don't like breakfast foods that much. It does it's job
Lunch: Turkey sandwich with lettuce, tomato, oil, and vinegar... I said ALITTLE oil and vinegar but that' s not what I got..
Snack: Nature's Valley peanut butter granola bar
Dinner: Stouffer's grilled entree - chicken teriyaki (3.5g of fat and about 300 calories)
_____________not the best day, tomorrow will be better ____________
Tomorrow I plan to eat a light yogurt and 1/2 multigrain pita w. peanut butter for breakfast

Stupid question alert: What does cottage cheese taste like? I can't get past what it looks like.. you know, all clumpy...but people have told me it's good but what would you compare the taste to? Since it's healthy .. I would like to incorporate it into my diet if it also tastes good.

Uh...a very mild cheese? If you can't deal with the lumps - throw it in a food processor and whip the lumps out. That's what I had to do to start liking cottage cheese. I can handle it, lumps and all now. Another good thing to try is the low fat pineapple cottage cheese, I love that stuff. It's also good with salsa.
If you want to slowly ease your way into cottage cheese, here's a spinach dip recipe I make (great for veggies).
2 cup container of cottage cheese
Lipton onion soup mix (half a package)
Frozen spinach (defrosted and well-drained)
small can of chopped water chestnuts
chopped purple onion
Sun dried tomato (not the kind in oil)
Put the cottage cheese in the food processor, whip until smooth. Add remaining ingredients, stir well.

It's not got much flavor in and of itself, but it's great with fruit mixed in. Blueberries and strawberries especially!

Yesterday's dinner ended up being 1 cup of whole wheat spaghetti over 1 1/2 cups mixed vegetables and 1/2 cup spicy spaghetti sauce, and a Skinny cow for dessert.
Snacks: 1 ear of sweet corn, 1 5-calorie ice pop, 6 cups naked popcorn
Breakfast this morning: 1 carton Egg Scramblers, 3 pieces turkey bacon (meant to get two, but didn't notice 2 thin ones were stuck together till they were already cooking)
Lunch will be: 1 cup fat free cottage cheese w/ 1 cup blueberries, 1/4 cantalope, 1 peach, yogurt

Daisy, I've never been able to eat cottage cheese. I think it's gross! I've heard it's an acquired taste though.
Yesterday:
B - multigrain cheerios w/skim milk and strawberries
(light workout)
L - turkey sandwich on wheat bread (tomato, lettuce, turkey, bread)
S - about 15 cherries
D - mixed greens salad w/italian dressing, whole wheat pasta, "italian sausage" pasta sauce with mushrooms, 2 ears of corn
S - leftover dumpling w/blueberry sauce
Total cals: 1474, a little higher than I'd like but pretty good
