Smile Yummy Lettuce Wraps

These are yummy and refreshing! I tried throwing them together for lunch today and they were really good...slight variation from the ones in the SB book. Can be eaten for snack or lunch or whenever!

Single serving (three wraps):

3 leaves of Boston/Bibb Lettuce
3 slices (or one serving) of low fat/ff chicken breast or turkey lunchmeat
1 slice of lowfat mozzerella cheese, divided into 3 strips
cucumber slices
dijon mustard

Smear a little of the dijon on the lettuce leaf, top with lunchmeat, mozzerella, and cucumber...roll up and eat!

Sounds a lot like what I have had but I use Jack Daniels Horseradish mustard insted of the dijon and haven't tried putting cucumbers in it. Will try that next time.

hmm I wonder if you can use tuna instead? To replace the lunch meat?

Default BLT & CHICKEN LETTUCE WRAPS

HERE'S A DIFFERENT LETTUCE WRAP I DO. I JUST LOVE BLT'S AND THOUGH I HAVE EATEN THEM WITH LOW CARB WHOLE WHEAT BREAD FROM TIME TO TIME SINCE STARTING THIS WAY OF EATING I PREFER TO EAT THEM ROLLED IN LETTUCE. I USE THE HATFIELD PRECOOKED BACON, 3 SLICES IS ONLY 70 CALORIES AND 6 FAT GRAMS AND NO CARBS. I ADD SOME DELI CHICKEN BREAST, TOMATO SLICES, AND JUST A LIL BIT OF MAYO. ROLL IT ALL UP IN LETTUCE LEAVES AND IT IS SO GOOD. YOU REALLY DONT EVEN NEED THE MAYO BECAUSE THE LETTUCE IS SO WET AND MOIST. I THINK YOU ONLY MISS IT WHEN ITS ON BREAD BECAUSE BREAD IS ON THE DRY SIDE. YOU CAN DO THIS WITH DELI HAM OR TURKEY TOO. BELIEVE IT OR NOT, THE DELI HAM IS HIGH IN PROTEIN AND LOW IN CARBS LIKE THE CHICKEN AND TURKEY.

Make sure you use turkey bacon or canadian bacon. Regular bacon is much too high in fat and is not allowed on South Beach.

I'M SORRY, DIDNT REALIZE THAT. I AM NOT FOLLOWING ANY SPECIFIC PLAN AS I DEVISED MY OWN LOW CARB, LOW SAT FAT DIET AND IT IS SIMILAR TO SOUTH BEACH OR ATKINS SO I HAVE BEEN READING THESE FORUMS. SORRY IF I OFFENDED ANYONE.
