Easy Brunch Strata - 4 Points

Amount Measure Ingredient -- Preparation Method

16 slices white bread -- crusts removed
3 cups egg substitute
2 cups skim milk
1 tablespoon Dijon mustard
1/4 teaspoon black pepper
1/2 pound turkey sausage -- cooked and crumbled
2 cups 50% reduced-fat Swiss cheese -- shredded
1/2 cup vegetables
such as broccoli florets, sliced green
onions and chopped red pepper -- optional
paprika -- optional

1. Preheat oven to 350 degrees F. Coat a 13 x 9 x 2-inch baking dish with no-stick cooking spray.

2. Arrange bread overlapping in bottom of baking dish.

3. Combine eggs, milk, mustard and pepper. Pour half of egg mixture over bread; sprinkle with sausage, cheese and vegetables, if desired.

4. Add remaining egg mixture. Sprinkle with paprika, if desired. Bake 25 to 45 minutes or until set and golden brown. Let stand 5 minutes before serving. Makes 12 servings.

* Strata may be covered and refrigerated overnight before baking.

Eating Well’s Good Egg Casserole - 4 or 5 Points

1/2 pound sausage, ground, 97% fat free, Jimmy Dean -- * see note
1 teaspoon Canola oil
1 pound red potatoes -- peeled and sliced
1 1/4 cups Egg Beaters 99% egg substitute -- * see note
7 large egg whites
1 pint cottage cheese, lowfat -- small curd
4 ounces shredded lowfat cheddar cheese
2 ounces grated nonfat Parmesan cheese -- * see note
8 ounces green chiles -- drained and chopped
1/3 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

1. Place oven rack in top third of oven; preheat to 350 degrees F. Lightly oil a 9-by-13-inch baking dish or coat with nonstick cooking spray.

2. In a large nonstick skillet over medium heat, cook sausage until no longer pink, breaking it up with a wooden spoon; transfer to a paper towel to drain, blotting the top with a second paper towel. Wipe the skillet clean and add oil; heat over medium-high heat. Add the potatoes and sauté until tender and browned, 10 to 12 minutes. (Reduce heat if potatoes are becoming too dark.). Let cool slightly.

3. In a large bowl, whisk together eggs and egg whites. Add cottage, Cheddar and Parmesan cheeses, chilies, flour, baking powder, salt and pepper and whisk to mix thoroughly. Add the cooked sausage, crumbling up any large pieces, andthe potatoes; mix well. Pour into the prepared dish. Bake 30 to 35 minutes, or until golden on top and set in the center.

* Original recipe called for bulk turkey sausage & 5 large eggs.

8 teaspoons reduced-calorie tub margarine, W. W. -- divided
8 slices Natural Ovens Right Wheat Bread, low cal.

16 ounces sausage, ground, 97% fat free, Jimmy Dean -- * see note
6 ounces shredded lowfat cheddar cheese -- * see note
1 cup Egg Beaters 99% egg substitute -- * see note
1 cup skim milk

This can be prepared in the morning, refrigerated and baked for the evening meal. Can also add additional vegetables such as drained canned mushrooms, chopped green peppers and onions.

1. Spray a 9 x 13 inch pan with non-stick cooking spray and set aside.

2. Spread 1 teaspoon reduced-calorie margarine on each slice of toasted bread; then cut each slice into quarters or small squares.

3. Brown turkey sausage in a non-stick skillet and break up into small pieces as it browns. Drain.

4. In 9x13 inch pan layer ingredients in the following order until used up; bread, sausage, cheese, (finish with cheese on top).

5. Mix in separate bowl the eggs and milk. Pour this egg mixture over other ingredients in casserole dish. Cover and refrigerate overnight. In the morning bake uncovered at 350 degrees F for 40 minutes. Divide evenly into 8 servings.

* Original recipe called for 8 slices regular bread, regular cheese, 4 eggs & ground turkey sausage (i.e. Mr. Turkey brand ground turkey breakfast sausage in a 1 lb. bulk package).

1. Layer bread in 13x9" baking pan.

2. Distribute ham evenly over bread. Sprinkle grated cheese over ham. Combine eggs and egg beaters with skim milk, mustard and pepper and mix till blended.

3. Pour egg mixture evenly over the ham and cheese in pan.

4. Cover and refrigerate overnight.

5. Uncover and bake at 350 degrees F for 45 minutes.

* Original recipe called for 8 sliced regular bread (crusts removed), 6 ounces cheese & no green chilies.

Smile Fresh Garden Pie

1 cup chopped zucchini
1 cup chopped tomato
1/2 cup chopped onion
1/3 cup grated Parmesan cheese
1 cup skim milk
1/2 cup Bisquick reduced fat baking mix
2 egss or use 1/2 cup egg substitue
1/2 tsp salt
1/2 tsp pepper
Heat oven to 400. Spray a 9-inch pie plate with Pam. Layer zucchini, tomato, onion and cheese evenly into disk. Put remaining ingredients in bleder for 15 seconds or whisk until smoth. Pour into dish over vegetables. Bake 35 minutes or until knife inserted in center comes out clean.

You can have 1/4 pie for a serving.

I haven't tried this one but I found it on a web site that has weight watchers recipes. Hope this helps.

Sausage Breakfast Casserole
Recipe by: WW Quick, Light and Healthy Cookbook
3 Points per Serving



3 cups (1 inch) cubed French Bread
Cooking Spray
1/2 pound bulk turkey sausage (such as Louis Rich)
1/4 cup chopped green onions (about 4 green onions)
3/4 cup (3oz) sredded reduced-fat sharp cheddar cheese
1 cup fat-free milk
1 cup egg substitute
1/2 tsp dry mustard
1/4 tsp salt
1/4 tsp pepper

Arrange bread cubes in an 11x7x1 1/2 inch baking dish coated withcooking spray. Coat a large nonstick skillet with cooking spray; place skillet over med-high heat until hot. Add sausage and green onions; cook until sausage is browned, stirring until it crumbles. Drain, if neccesary. Layer sausage mixture and cheese over bread cubes. Combine milk and remaining 4 ingreds.; pour over bread mixture, sausage and cheese. Press down on bread mixture with a spatula to cover totally with milk mixture. Cover and chill 8 hours or overnight. Bake casserole, uncovered, at 350º for 30 mins or until set and lightly browned. Let stand 5 mins before serving.

Yields: 6 servings
