I love giant sea scallops! I make a walnut cream sauce to pour over seared scallops. I'd list the ingredients, but it sounds obscene, lol. However, it's all about portion control, and the calories of the finished product are still reasonable.
I eat a lot of spinach, and love a casserole made with cottage cheese, eggs, parmesan or feta, and chopped spinach. It's great for a side dish, but is also good at breakfast.
I like to add asparagus tips and tomatoe pieces to couscous mix. It's quick and easy.
