Default Quick & Easy Brunch Eggs (from Kraft healthy living)

Hello! I haven't made this yet, but it looks super easy! The original recipe called for 4 English Muffins instead of 8 portabella caps.

3 cans (14oz each) stewed tomatoes, well drained
1 Tbsp chopped fresh basil
8 eggs
1 cup f/f mozarella cheese
8 portabella mushroom caps
1 tbsp chopped fresh parsley

Combine tomatoes and basil in a 13x9in baking dish. Form 8 wells in the tomatoe mixture. Add broken egg to each well. Bake at 350 for 25 min or until eggs are set. Sprinkle cheese, continue baking until cheese is melted. Serve over well drained mushroom caps.
