I have a similar recipe to the Sunshine Cake...I also do not have the points...
AMBROSIA CAKE
1 Box Betty Crocker Sweet Rewards Cake Mix
(Do not use instructions on box)
1/2 c. water
1/2 c. unsweetened applesauce
1 small can Mandarin oranges (undrained)
Mix first 4 ingredients together and bake in lightly oiled 9x13 pan at 350 degrees for 35 minutes or until done...let cool...
FROSTING:
1 large can crushed pineapple (20 oz.) undrained
1 box instant sugar free vanilla pudding (3 oz.)
1- 8 oz. carton Fat Free Cool Whip
Sprinkle pudding over pineapple. Let this set until it thickens. Add thawed Cool Whip with pineapple mixture and spread over top of cake. Refrigerate.
This recipe doesn't call for eggs, so it should be less points...If anyone can figure it, please let me know....JudyK It sure is a good recipe...I took it to a dinner this week and it was a hit!

Smile Orange-Almond Cake (Passover)

This one is a serious winner for Passover or any time of year.

* Exported from MasterCook *

Orange-Almond Cake

Recipe By : WW Magazine, March/April, 2001 p 97
Serving Size : 10 Preparation Time :0:00
Categories : 4 Points Desserts
Jewish Dishes Passover
Weight Watchers

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/3 C Matzo Meal
1 C Almonds -- Whole
1 Whole Orange Rind -- 1 Orge Worth, Grated
2/3 C Sugar
2 Whole Egg Yolk -- Room Temperature
1/2 C Orange Juice
1/2 Tsp Vanilla
3 Whole Egg White -- Room Temperature

1. Preheat the oven to 350 degrees. Line a 8 inch springform pan with wax
or parchment paper, spray with non-stick spray and dust lightly with matzo
meal.

w. Grind the almonds in a food processor or blender until very finely
crumbed, 2-3 minutes. Add the matzo meal and orange rind, pulse once or
twice to blend thoroughly.

3. With an electric mixer of medium speed, beat the sugar, egg yolks, and
orange juice in a medium bowl until thick and yellow in color, about 2
minutes. Beat in the vanilla. Sprinkle the almond mixture over and lightly
fold until blended.

4. With an electric mixer on medium speed in another medium bowl, beat the
egg whites until soft peaks form, about 3 minutes. Fold into the almond
mixture. S pread evenly in the prepared pan and bake until a toothpick
inserted in the center comes out clean, 35-40 minutes. Let cool completely
on a rack, about 1 hour, then remove from the pan and carefully peel off
the wax paper (the cake is *very* fragile). Sift the confectioner's sugar
evenly over the cake just before serving.

Serving Ideas : fresh orange slices tossed with a little honey and grated

NOTES : Parve Cake will stay moist and delicious for 3 days. Wrap it in
plastic wrap and refrigerate. Can be frozen by wraping in plastic
wrap and then foil for up to a month. You'll need to freeze it in
a cake pan just large enough to hold it. You'll need the cake pan
because the cake is so fragile. Then remove it from the cake pan
to store in freezer. To thaw, place in refrigerator for 6 hours or
overnight.
SERVING TIP: fresh orange slices tossed with a little honey and
grated orange make a good garnish.
This one is a winner. A couple of notes:

- Ignore the recipe and make it in a small bundt pan (the
mini-size). It will look much better.
- A 9 inch round pan won't work.
- It had 2 tsp of confectioner's sugar in it. I didn't use it and
didn't miss anything. And Passover confectioner's sugar is hard
to find and a pain to make.
- Use a large, jucy orange for that orange peel. I used a smaller
one the first time and the cake didn't have enough taste.

Thumbs up Mandarin Orange Cake

Mandarin Orange Cake

1 Yellow Cake Mix
1 Can of Mandarin Oranges (not drained)
1/2 Cup Applesauce
4 Egg Whites

Mix together and bake in a 9 x 13 pan sprayed with PAM for 30 minutes

1 - 8 oz Carton of FF Cool Whip
1 - Can Crushed Pineapple (? I think it was about 20 oz, definitely larger than the normal size)
1 - Pig. FF Instant Vanilla Pudding

Mix together and pour on cooled cake.

Extremely easy! I used the "normal" size can or oranges - I think it was 12 or 14 oz.

This is Weight Watcher's recipe. It makes 24 servings that are 2 points each
