Whole Wheat Pizza Dough

2/3 cup water
2 teaspoons extra virgin olive oil
1 teaspoon Honey
1 cup all-purpose flour
1 cup whole wheat flour
3/4 teaspoon salt
1 1/2 teaspoons active dry yeast

Put the ingredients in the bread macine pan. Select dough setting. When cycle is complete, remove th edough. Form it into a ball and let rest for 10 minutes.

Preheat the oven to 450 degrees. Lightly grease a 14" pizza pan or sprinkle it with cornmeal to prevent sticking.

Using both hands, streach the dough to fit th epan and press it evenly into it. Pinch the dough around the edges to form a rim. add desired toppings, and bake for 12-14 minutes, until the sauce is bubbling and the crust is lightly browned.

Pita Pizza with Ground Beef - 4 points

4 pita bread, whole-wheat -- split horizontally
4 ounces 93% fat-free ground beef
1 clove garlic -- minced
1 cup tomato sauce -- no salt added
1 teaspoon dried oregano
3 ounces Precious Low Moisture Part Skim Mozzarella
1/4 teaspoon salt
fresh ground black pepper -- to taste

1. Preheat oven to 435 degrees. Place pita rounds onto nonstick baking sheet; bake 5 - 10 minutes, until roasted. Remove pitas from oven; leave oven on.

2. Meanwhile, spray small nonstick skillet with nonstick cooking spray; heat. Add beef and garlic; cook over medium-high heat, stirring to break up meat, 2-3 minutes, until no longer pink. Remove from heat; set aside.

3. Spread each toasted pita round with 2 tablespoons tomato sauce. Sprinkle sauce with equal amounts of oregano, then cheese; top cheese with equal amounts of reserved beef, then sprinkle evenly with salt and pepper.

4. Bake 5 minutes, until sauce is bubbling and cheese is melted.

2 jars (7 ounces) roasted red peppers -- drained
3 cups shredded mozzarella cheese
Italian bread shell

1. Preheat oven to 450 degrees F. Crumble tofu into bowl. Add oil and all
spices. Mix. Marinate in refrigerator for at least 30 minutes. Place pizza
crust on baking sheet and spread with pizza sauce. Top with crumbled
cajun tofu, red peppers and mozzarella cheese. Bake 8 to 12 minutes or
until toppings are heated throughout. Yield: One pizza cut into 8 wedges.

1 cup Prego Extra Chunky Garden Combination -- Pasta sauce
36 slices Galileo Reduced Fat Turkey Pepperoni
1 tablespoon oregano
1/2 tablespoon basil leaves
1 cup sliced mushrooms
1 cup diced green bell pepper
1 small red onion -- diced
2 cloves garlic -- finely chopped
4 ounces mozzarella cheese -- shredded

Pre heat oven to 405 degrees. Spread the pasta sauce on the pizza crust. Sprinkle on the oregano and basil. Add the pepperoni, then the veggies, and finally the cheese.

Bake directly on your oven rack for 10-13 min. Let the cheese melt until almost bubbly, but don't burn the thin crust. Cut into 6 slices.

NOTES : Yummy! I love pizza and if anyone told me couldn't eat pizza on a "diet", I would tell them to "Take a flying leap!" So, now I just make it healthier- with a thin crust, lots of veggies, and a little less cheese. Have a slice or two with a side salad. This also makes great left overs if you reheat it in a toaster oven to re- crispen the crust . You can substitute fresh basil and oregano if you are lucky enough to have some out in your garden. "What? You don't have a garden?.... well, that's another topic! Enjoy!

1 package refrigerated biscuit -- (buttermilk)
1/4 cup tomato sauce -- low-sodium
1/8 teaspoon dried oregano -- (or basil)
1/2 cup mozzarella cheese, part skim milk -- grated

Coat an 8" round baking dish with nonstick spray. Arrange biscuits in dish, pressing them
lightly to cover bottom. Spread sauce over biscuits, sprinkle with oregano and top with cheese.
Bake at 375 until cheese has melted and is bubbly and biscuits are done, 10-15 minutes. Cool
and cut into 4 wedges. Place each wedge in a separate freezer bag. Refrigerate 1 wedge for use
next day; freeze remaining 3 wedges for up to 2 weeks.

To transport: Keep chilled until ready to eat. Serve at room temperature or microwave on MEDIUM
until warm, about 40 seconds.

Default Pita Pizza

This is a recipe I rely on just about any time; you can use it for a snack or meal and is very healthy. I can it a pita pizza.

Take 1 wholewheat pita and place on cookied sheet (spray lightly with cooking spray). Take 1 T. low fat spaghetti sauce, sprinkle with oregano and add chopped onion and bell pepper. I then add EITHER half of a small can of mushrooms or a small amount of chopped ham or polish sausage. Add 1/4 c. of fat free cheese or pepper jack cheese, if you want to splurge with calories/points. You can lightly spray the fat free cheese with cooking spray so it will melt. Enjoy!

Crusty Pizza Dough (Whole Wheat) -- 3 WW points

1 1/3 cups warm water
2 tablespoons olive oil
3/4 teaspoon salt
2 cups All Purpose Flour -- or bread flour
2 cups whole wheat flour -- I use "white" wh. wheat
2 teaspoons yeast

Place ingredients in your bread machine in the order suggested by the manufacturer.

Set for "dough" cycle.

When cycle is finished, roll dough out into rectangles or circles, depending on the pan to be used. Place on pan and turn excess under, forming a crust on the side.
(I roll mine into 2 large circles and then use a corn meal coated pizza peel to transfer directly onto a pre-heated pizza stone in a 500°F oven after toppings are added.)

Brush very lightly with olive oil. (I add a clove of crushed garlic to my olive oil before using.)

(For a thicker, chewy crust, cover and let rise about 30 minutes.)


Top with pizza sauce, cheese and other desired toppings.

Bake in a pre-heated 500°F oven for 5 to 10 minutes, or until crust is brown and cheese is melted.
(I pre-heat oven to 500°F for at least 20 mins. I then turn the temperature down to 450°F right after I put the pizza in and bake for about 12 minutes)

NOTES : This is my favorite "healthy" Tried 'N True pizza dough recipe. I usually use bread flour and King Arthur "White" Whole Wheat flour. I add a couple of teaspoons of Vital Wheat Gluten to the recipe, if I have it on hand; it makes the dough stretchier. This dough is very easy to roll out (probably because of its lower gluten content). I highly recommend this bread machine cookbook! I got it for $4.69 at Sam's club in around 1997.
This dough can be frozen, but I don't usually bother since it would take longer to thaw than to just make up a fresh batch. To save yourself a bit of time, you could mix up a bag of the dry ingredients (except for the yeast) and then just measure out the wet ingredients when you want to make up a batch.

Quick Pizza Dough - 3 Points

1 Package rapid-rise yeast -- (1/4 oz)

1. In food processor work bowl (or large bowl), combine flour, yeast, sugar and salt; pulse or stir well to combine. With motor running, gradually add water and oil(or stir to combine thoroughly), until dough begins to hold together.

2. Turn dough out onto work surface and knead until smooth and elastic, about 10 minutes.

3. Spray large bowl with nonstick cooking spray; place dough in bowl. Cover loosely with plastic wrap or a damp towel, and let rise in a warm, draft-free place 10 minutes.
Proceed with pizza recipe.

I made this recipe last night from a WW magazine and DH loved it.

1 Pita bread (pocketless is required - but we used wheat with pockets and think this cuts down on points)
1 plum tomato, chopped
1/3 cup cooked chicken breast (skinless)
3 tbsp shredded Mont Jack cheese (I used light so I also thinks this cuts down on pts)
1/8 cup avocado, diced
1/4 cup alfalfa sprouts
2 tbsp nonfat sourcream

Preheat oven to 425F. Set pita on baking sheet. Sprinkle with tomato, chicken, and cheese; then bake until cheese melts about 10 minutes. Sprinkle with avocadoe, sprouts, and a dollop of sourcream.

8 Points Per Serving - but if use pitas with pockets and light cheese then you'll cut down points overall - maybe 1 or 2 less? (6 pts).

Sweet Potato and Spinach pizza - this is GORGEOUS

Top a white or wholemeal (you decide) pita bread with tomato puree (mixed with a little oregano and garlic - or just use a Tablespoon of store-bought pizza sauce)
Add red onion,
Add some cooked sweet potato (or pumpkin),
Add some baby spinach leaves

Mix some low fat fetta cheese and some low fat mozzarella together, then and sprinkle on top

bake in the oven around 220 degrees CELSIUS *until the cheese bubbles

*(sorry im australian, I don't know what the fahrenheit measurements are)

220 celcius = 425 farenheit
gonna try this tonite...hope the kids like it!

Default Pizza dough and pizza sauce

Pizza Dough:
2 1/2 cups flour
1 tsp salt
1 tsp sugar
1/2 tbs yeast
1 tsp oil
7/8 cup water (warm about 90 degees)

If you have a food processer or bread machine it's easy, just put all the ingredients in and let the machine do the work. If not, mix dry ingredients. Add oil, water, and mix until it forms a dough.

Knead on a lightly floured for 5 minutes or until it feels smooth and springs back when you poke it. Place in a lightly oiled bowl, (large enough for it to double in size) cover with a towel and set in a warm place to double in size (approx. 1 hour). After it doubles punch it down and let it double again. Spread out on an oiled pizza pan.

Pizza Sauce:
6oz. tomato paste
1 tsp italian seasoning
1/2 tsp garlic powder
1/2 tsp sugar
1/2 tsp onion powder
salt & pepper

Spread tomato paste on dough. Sprinkle all seasonings on evenly.

Top with your favourite toppings and a bit of low fat mozzarella:

Suggestions:
cooked chicken,Low fat Feta cheese and Kalamata olives
OR low fat turkey sausage and green and red peppers
OR cooked lean ground beef, fresh garlic and onions with some hot banana peppers

Bake in a COLD oven- don't preheat!. Place the pizza on the bottom rack of the oven, set the oven to 400 degrees, and bake for 20 to 28 minutes.
