Actually, it's been proven that very little alcohol burns off when alcoholic beverages are quickly cooked. Check out this link for more info.

Also, Rice Wine is actually a beer, not a wine. Check it out here. All in all, I'd leave out the rice wine in the above recipe (although it IS yummy!) and substitute either rice vinegar, or some chicken stock.

That said, the recipe looks awesome, and I'm gonna try it! I love love love mu-shu chicken!
