Default Egg muffins

I can't take credit for this recipe as Leens, the moderator of Depression and Weight Issues and good friend, posted it somewhere else. I made it this way and DH loves them.

I mixed together 8 eggs, a shredded zucchini, 4 fried and crumbled slices of bacon, a cup of mozz cheese and put it all in 6 of those huge muffins cups after I sprayed them with Pam. I baked them at 350 for 20 minutes until they were browned a bit.

Next time I'm making them with pepperoni, mozz and oregano. How about low fat cheddar cheese with broccoli and maybe a touch of onion? The variety is endless.

I don't know the nutritional values.

Regarding those egg muffins that I posted....they are freezeable! I experimented and they are just as good thawed and nuked. I am going to wrap them though in a plastic wrap and pop into a freezer bag for longer storage.
Guess what I'm making a huge batch of tomorrow. Am certainly glad DD raises chickens.

This is not a SBD Phase I recipe unless you use Canadian bacon and low fat cheese.

I used turkey bacon, peppers, and onions...they were good ! And...easy to grab in a hurry!

Question Can I just just use egg white for this ?

I am still in phase 1, and dont think I can have whole eggs with the yolk, these sound really good... can i just use egg whites for this recipe?

You could use Egg Whites, but why don't you think you can have whole eggs?

If you are concerned about the fat in whole eggs, use Eggbeaters®. They have much less cholesterol. Whole eggs are definitely allowed in Phase I.

I made these last night and they're delicious! I added mushrooms, zucchini, onions and canadian bacon to the eggs but used a normal size muffin pan. Next time I'll be sure to use the bigger muffin pan so there's more egg in each muffin. I have the extras in my frig wrapped up for the rest of the week.

Yum!!! I am going to make these with diced green chillis (ortega type) and shredded low fat pepperjack cheese!! Or cheddar or a combo of the two!
I think I may add some crumbled turkey bacon too....thanks for the great recipe!! Can this be made in a square pan do you think??? I have a feeling I could eat a whole 1/4 of it for breakfast!!!

I threw everything into fitday.com to see what the nutritional information is:
using part skim milk mozzerrella cheese and turkey bacon it comes out to be
185 calories, 12g fat, 2.5g carb, 0.3g fiber.

I was curious with all that cheese how bad it would be, but I guess 1 would be ok for breakfast. I have a bad habit of eating several, you know that slight portion control problem
