Broiled Scallops

Ingredients:
1 1/4 pounds scallops
2 tablespoons olive oil
1/2 teaspoon lemon pepper
1/2 teaspoon garlic powder
1/2 lemon, cut in wedges

Directions:
Brush scallops with oil.
Add garlic and lemon pepper.
Cook under broiler for five minutes or until scallops are opaque. Serve with lemon slices.

Per serving: 188 Calories; 4g Carbohydrates; 8g Fat; 24g Protein; 47mg Cholesterol; 271mg Sodium.

Default Savory Cheese Bites

I'm posting the recipe here for everyone. Mmmm. They're so good!

1/2 c. grated Parmesan cheese (lf)
1/3 c. sliced almonds, finely chopped
1 tsp. Italian Seasoning Mix
1 egg, lightly beaten
1 garlic clove, pressed
1 package lf cream cheese, well chilled
1 jar spaghetti sauce, warmed

1) Preheat oven to 375. Combine Parmesan cheese, almonds, and seasoning mix. Mix well.

2) In small bowl, combine egg and garlic. Whisk. Slice cream cheese in half lengthwise and then crosswise into 12 slices, for a total of 24 slices. Dip cheese slices in egg mixture, then coat in Parmesan cheese mixture. Arrange evenly on a baking stone. Bake 18-20 minutes or until light golden brown. Serve immediately with sauce.

Helpful Hint: To easily slice cream cheese, dip knife in hot water and wipe dry between cuts.

Default Veggie Lover's Pizza Dip

1/4 c. chopped broccoli
1 container light garden vegetable cream cheese spread
1 garlic clove, pressed
1/4 c. grated fresh lf Parmesan cheese, divided
1/2 c. shredded lf mozzarella cheese, divided
1 c. spaghetti sauce
Italian Seasoning Mix (optional)

Assorted vegetable dippers such as broccoli florets, celery sticks, red and green bell pepper strips, yellow squash or zucchini slices.

1)Preheat oven to 350. Chop broccoli. Combine cream cheese, broccoli, and garlic. Spread over bottom of a small baker/casserole dish.

2)Sprinkle half of the cheeses over cream cheese mixture. Top with sauce, spreading evenly. Bake 15-20 minutes or until bubbly. Sprinkle with remaining cheeses and seasoning mix, if desired. Serve with assorted vegetable dippers.

We can always served stuffed mushrooms. I know they seem boring, but my best friend's boyfriend wouldn't come over unless I made them. We can do traditional for everyone else and spinach for us. Yum!

My other favorite not too bad one is a 7 layer mexican dip: seasoned ground turkey, then refried beans, then salsa sliced black olives, then salsa, then guacamole (I can post a couple of recipes that I think are ok to ask the mods), then sour cream, then low fat cheese. Heat it thru in the over- maybe 20 mins. The issue is what to serve it with. Personally, I eat it with a spoon! But maybe red peppers? Homemade whole wheat pita chips? Just though I'd throw that out there!
