It is sooooo cold today that I NEED some soup. I have soup mix that contains split peas (p1 legal), barley (p2 legal) and lentils (p1 legal) and my Mum's recipe uses celery, onion and carrots. I will leave out the meat and make a vegie soup. I know the carrots are limited in phase two and I thought about substituting them for pumpkin but can't find any information about pumpkin. Which is better to use? Carrot or pumpkin?
Carrots are better. Pumpkin is allowed on Phase 2, but according to the GFGCG, you can only use 1/2 cup and it's "Very Limited"...so I would go with carrots.
Soup sounds great! Enjoy! (and check out the extensive soups and stews for both Phase 1 and 2 in the recipe forum)
Is sweet potato better than carrot? I put three carrots in a huge pot full and only used about 2/3rds of a cup of soup mix. I will keep making soup over the next few months though so am trying to figure out how to stay on plan.
