Default New South Beacher

Hi! I'm new to South Beach and to this forum!
My husband and I started the diet 2 days ago (feels a lot longer though). We were carb addicts for a very long time so this decision was NOT an easy one! But I have a lot of weight to lose and will try just about anything now.
The hard thing is my husband is a vegetarian. And for money and time reasons I haven't been buying or cooking meat for myself. I don't mind eating vegetarian it just seems so hard to find entrees and lunches that follow the south beach plan! All the pasta and rice he used to eat is out now!
Any ideas you have on good veggie meals would be much appreciated!

There are a ton of great vegetarian options. Beans are one! Check out the recipe forums here for tons of bean recipes I recently posted from Cooking Light. I love that magazine. They have a section every month called "Inspired Vegetarian" that would be right up your alley. Check out their website at: www.cookinglight.com (you have to register to use it, but it's free and worth the time). Have you taken a good look at vegetarian burgers? Some have wheat in them which makes them Phase 2, but many are okay on Phase 1. You can also make your own black bean burgers, which would be yummy! There are a million things you can do with tofu and tempeh.

Try searching www.dogpile.com or www.google.com for "vegetarian recipe" (including the quotes) and you'll find a ton of websites. Here are some that I found:

There is also an excellent Veg. forum in 3FC...look for it under Alternachicks. Mauvais Roux is the moderator there, and she does a WW/SBD hybrid, I believe, so she may be a great resource for you. Try PMing her to see what she might be able to share with you regarding good veg. meals.

You will love the forum, everyone is so nice. Beachgal had some great sites. The SB book was helpful for me and gave me ideas for recipes.
