Default Asparagus Salsa

Posted this before the new servere changeover. It is good, just as a side with no chips, but pita might work.
Asparagus Salsa
[LEFT]
1 lb fresh asparagus, trimmed and cut into 1/2 " pieces
1 cup chopped seeded tomatoes
1/2 cup finely chopped onion
1 small jalapeno pepper, seeded and finely chopped
1 Tbsp. minced fresh cilantro
1 garlic clove, minced or crushed
1 tsp. wine vinegar, or other to taste
1/4 tsp. salt
Place asparagus in a large saucepan; add 1/2 " water. Bring to a boil. Reduce heat; cover and simmer for two minutes. Drain and rinse in cold water.
In a bowl, combing the asparagus, tomatoies, onion, jalapeno, cilantro, garlic vinegar and salt. Cover, and refrigerate for at least 4 hours, stirring several times.
YIELD: 3 cups
